For my July roundup, I took the liberty of asking Eaters to salute their favorite sandwich -- by naming the stuffed breadstuffs that form a more perfect union. I asked them to lay off the banh mi ( recently discussed here ) and leave out the burgers (for now). Battles raged. But I'm in it to win it -- and did they ever come up with some winners. 1 cup beef or veggie broth 4 tablespoons all-purpose flour 2 tablespoons tomato paste 3 tablespoons bacon drippings 2 pounds beef round roast / shoulder piece, cut into 3 inch pieces 1 1/2 cups chopped onions 3 cups Burgundy wine 5 sprigs fresh parsley 3 sprigs fresh rosemary 2 sprig fresh thyme 3 bay leaf 12 fresh mushrooms, sliced 1/4 cup butter 1 tablespoon chopped fresh parsley, for garnish 1 tablespoon active dry yeast 2 tablespoons white sugar 1 teaspoon salt 3 1/2 cups whole wheat flour or spelt flour 1 cup milk 1 tablespoon distilled white vinegar 1/4 cup water 1/4 cup margarine 1/3 cup minced onion 1 clove garlic, minced 1/2 teaspoon salt 1 tablespoon minced parsley 2 tablespoon minced oregano 1 tea spoon minced thyme Pinch of savory or sage 2 tablespoons margarine Combine the yeast, sugar, 1 teaspoon of the salt and 1 1/2 cups of the flour. In a sauce pan combine the milk, water and 1/4 cup of the butter or margarine until 38 Celsius /110 degrees F. Add milk mixture and vinegar to the flour mixture and blend by hand - slowly. Add 1 1/2 cups additional flour to form a sticky dough. Keep adding rest of flour and soft kneading till the dough is smooth and pliable. Let the dough rest till doubled in volume! Meanwhile melt butter / margarine till melted add onions, garlic and all herbs - let it cool down a bit while rolling the dough in a rectangle shape, fairly thin. Spread the herb/butter mixture and roll the dough. Not sure how to say it English, from the long side? The long side of the rectangle. Roll the dough tightly and then roll it like a cinnamon bun. Set it seam down on a greased sheet and let it double again. Preheat oven to 200Celsius / 400F and let the bread bake for 30min or until golden. Brush bread with butter. It is difficult to know where to begin for it is true that the world of the master-fills me with perplexity as much as with wonder.
